Some days I could really go for some chocolate in the form of a warm chocolate cake. Then I go to my pantry and realize I have no cake mixes and no desire to bake a complicated came from scratch, because really, when you have four kids who has time to bake a cake from scratch?
Today was exactly one of those days. Thanks to a freak winter storm that was blasting up the East Coast, we woke up to 3-4″ of snow here in Coastal Carolina – a place that does NOT get snow.
The kids were ecstatic! Schools and work shut down, and the whole family stayed home so I dusted off the old snow sleds and snow boots that I’ve held onto since our time living in Northern Virginia and we all enjoyed some time playing in all of that white powdery stuff!
We had a blast. There was just enough snow for the kids to have fun and not be stuck inside. We made a sled track in the backyard, the neighbor built a slide down his back porch stairs, and played a few backyard winter games!
After playing outside all day the kids came in for some hot cocoa but I really wanted to warm up with some baking in the kitchen and of course, I also had no desire to bake something super complicated after dressing and undressing four children in snow clothes.
A warm chocolate cake was going to be just the thing, I just needed an easy chocolate cake recipe!
I pulled out my binder of recipes and there it was, my grandmother’s cockeyed cake, the easiest cake recipe ever!!
Why is it called Cockeyed cake?
Why it’s called a cockeyed cake I really do not know, maybe because the way you make it is a little unusual – whatever it’s called though it is truly the easiest chocolate cake recipe you will ever bake.
This super simple chocolate cake recipe is amazing. You don’t even need a mixing bowl! All you need is the cake pan you’re going to bake it in. So not only is this cockeyed cake the easiest chocolate cake to make it’s also the easiest to clean up.
Cockeyed Cake Recipe
INGREDIENTS:
1 1/2 cups flour
1 cup sugar
3 tbsp cocoa powder
1 1/2tsp. baking soda
1/2 tsp. salt
1 Tbsp Vinegar
5 Tbsp. Oil
1 tsp vanila
1 cup cold water
DIRECTIONS:
Sift dry ingredients into greased cake pan
Make three holes in the dry ingredients
Add vinegar in one, oil in one, and vanilla in one
Pour cold water over the top
Beat until the flour disappears
Bake in pre-heated 350* over for 30-40 minutes
You can top your cockeyed cake with a sprinkle of powdered sugar or make a chocolate buttercream frosting to go with it but I love this chocolate cake just as it is! It’s especially good right out of the oven when it’s still warm!
