A breakfast casserole is the perfect solution for feeding a crowd. I love to make them on the weekend for my family or for a Holiday brunch to share with friends. The recipes feed a lot and they are easy to prepare and make ahead. This recipe is so fantastic because you can make it in the crock pot!
I like to prepare this casserole the night before and put it in the fridge. I get up early and turn on the crock pot and let it cook the next morning while everyone sleeps. Then, they wake up to a delicious warm breakfast and I get to enjoy some quiet time or snuggles with the baby instead of cooking in the kitchen.
Crock Pot Breakfast Casserole
Ingredients:
- 1 lb bacon
- 12 eggs
- 1 1/2 cups whole milk
- 1 loaf french bread
- 1/2 tsp. salt
- 1/4 tsp pepper
- 1/2 tsp garlic powder
- 1/4 tsp ground mustard
- 2 cups shredded cheddar cheese
Directions:
Cut french bread into 1 inch pieces. Chop bacon and cook until crispy. In a large bowl, beat together eggs and milk. Add your salt, pepper, garlic powder, and mustard. Butter the bottom and sides of your crock pot. Layer in the bread, cheese, and bacon. Pour egg mixture over the top and stir to coat. Cook on low 6-8 hrs, until egg mixture is completely cooked.
