It is hot, hot, hot and the last thing I want to be doing is cooking in my kitchen. Crock Pot recipes are so convenient for busy days but they’re also great for the hot summer months when you don’t want to heat up your kitchen! I made these cheesy chicken tacos with just three ingredients and the whole family loved them.
Crock Pot Cheesy Chicken Tacos
This simple recipe takes only three ingredients and cooked on high was ready in 3 hours! Easy, fast, and delicious – my kind of meal!
INGREDIENTS:
- 2-3 boneless skinless chicken breasts (mine were quite large so I only used 2, if your are smaller you could easily use three)
- 1 can Rotel Original(diced tomatoes and chiles)
- 8 oz cream cheese cubed
DIRECTIONS:
Add your chicken breasts, can of Rotel, and cubed cream cheese into the crock pot and set on high. You could also cook on low and plan for a six hour cooking time instead of three. At the 2 hour mark, stir to make sure the cream cheese is melting and mixing in with the Rotel. After three hours of cooking, shred your chicken and return to the pot. Mix well with the sauce and keep warm until you are ready to eat.
Serve with tortillas and you choice of toppings – lettuce, shredded cheese, diced tomatoes, etc.

Over all the recipe is quite mild, if you want spice it up add your favorite hot sauce such as El Pato, Chalupa, or Tapatio. You could also add some fresh salsa or pico de gallo!
