We joke and call this the “everything but the refrigerator” soup because that’s exactly what it is – a little bit of this and a little bit of that, all combined and cooked in the crock pot which makes it an easy dinner for sure! I love how my recipe can change a bit depending on which veggies I have on hand. But there’s more to my secret weapon – I can’t just cook up the soup and serve it, they will SEE the vegetables and go running for the hills!! The true secret is how the soup is prepared. No matter what vegetables I use to make the soup, the final step is blending it up and adding a2 milk®!

The A2 refers to the protein in the milk. Long ago, cows only produced A2 protein but as time went on and things evolved, many of them started producing the more common A1 protein which is really hard for most people to digest. Crock Pot Creamy Tomato Vegetable Soup
Ingredients:

Crock Pot Creamy Tomato Vegetable Soup
Ingredients
- 2 cans diced tomatoes
- 2 cans chicken (or vegetable) broth
- 1 red bell pepper
- 1 large zucchini
- 1 sweet onion
- 2 cups carrots
- 4 stalks celery
- 2 garlic cloves, minced
- 2 tsp basil
- 1/2 tsp oregano
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 cups Milk
Instructions
- Chop and combine all ingredients in your crock pot.
- Cook on high 6-8 hours, until vegetables are all very soft.
- Remove soup and blend using blender or food processor until smooth.
- Return to crock pot and add in milk. Stir and cook on low until heated through.
