We found a love for camping with our kids a year ago when my husband talked me in to purchase a travel trailer – I was reluctant about adding another monthly payment to our budget. I agreed and after a year I cannot believe we didn’t do this sooner!
In the last year we have experienced so much with our children. Enjoyed each others company and created so many memories with them. These memories are a series of moments – our signature moments – that I know they will remember for a lifetime. With each camping trip I learn a little bit. I learn what works and what doesn’t. I come up with easier ways to do things, to organize things, to make creating these signature moments just a little bit simpler – because let’s face it, packing up a family of six is no easy task!!
One of the things I think we’ve pretty much perfected is the food! I’ve learned that just because you are without the amenities that you are used to at home does not mean you can’t eat delicious food – gourmet food even! With a little bit of pre-planning you can create delicious gourmet camping foods the whole family will love.
Now we didn’t always have a travel trailer. I have done several camping trips with the family in a tent and had a blast!!! These recipes are meant to be made over a grill or a campfire, you do not need any fancy equipment.
But first, you must do your planning. Gourmet Camping Foods Your Whole Family will Love
A fun food for the kids is this simple twist to your traditional PB&J. We make up some fresh squeezed lemonade (a great activity for the kids to do) and serve them with double-decker PB&J bites made with a variety of breads, crunchy peanut butter, and strawberry preserves.
*Hint: if you have left over hot dog or hamburger buns from dinner this is a great time to use up the extras.
These are fun for the kiddos but for dinner I like to do something with a little more flavor. On this menu we have Grilled Herb Potatoes, Three Bean Salad, and Italian Stuffed Chicken! YUMMMM!
The main dish is the Italian Stuffed Chicken. It sounds fancy but surprisingly easy to make!
Italian Stuffed Chicken
Make a mixture of 8oz cream cheese, half cup shredded mozzarella, half cup shredded parmasean, half cup Italian bread crumbs. Slice 4 chicken breasts to make a pocket and fill with cheese mixture. Secure with toothpicks and grill on medium until completely cooked through.
For the side dishes we served Three Bean Salad and Grilled Herb Potatoes. I use foil packets to cook the potatoes.
* Hint: These foil packets are great to cook a variety of items – perfect for cooking vegetables or shrimp! To make a foil packet you layer two pieces of foil with your foods in between and fold up the edges to create a square pouch.
Three Bean Salad
Combine 1 can white beans (drained and rinsed), 1 can green beans (drained and rinsed), 1 can garbanzo beans (drained and rinsed), 1 can black olives (chopped), and 1 can can artichoke hearts. Dress with lemon juice, balsamic vinegar, olive oil, salt and pepper.
Grilled Herb Potatoes
Wash and quarter red potatoes. Add them to your foil pouch and drizzle with olive oil, Italian seasoning, salt and pepper. Grill until potatoes are soft.
