One of my absolute favorite summer time activities is a backyard BBQ. The weather in the evenings is beautiful and what better way to spend an afternoon than hanging outside with good friends and family?!
Living in Southern California we are fortunate to have lovely weather nearly all year so our grill gets a lot of use! When entertaining I like to make something easy that I can prepare ahead of time so that I can enjoy our time with friends. One of my go-to recipes are grilled chicken kabobs with an Asian marinade.
When making this dish, I have found that the better the quality of chicken, the better the results you will have. Foster Farms now has Simply Raised and Organic varieties of their chicken that we have used in this recipe.
The Foster Farms Simply Raised antibiotic free chicken is raised locally here on the West Coast, and is American Humane Certified, so I know that it is Fresh and the product has been well taken care of. The chicken is 100% natural, raised on a completely vegetarian diet – minimally processed with no added preservatives, steroids, hormones, or sodium.
I can prepare the chicken the night before and set it in the refrigerator to soak up all of the tasty marinade goodness. The following day, I assemble the kabobs and once company arrives all I have to do is toss them on the grill – ready in about 20 minutes!
Fresh Grilled Chicken Kabobs
Ingredients:
- 3 Foster Farms Simply Raised Chicken Breasts – Cut into one inch pieces
- ½ cup soy sauce
- ¼ cup brown sugar
- 1 tbsp. crushed garlic
- 4 tbsp. cooking oil – divided
- 2 tbsp. rice vinegar
- Sea Salt
- Pepper
- 1 Large Zucchini ( or 2 medium)
- 1 Red Bell Pepper
- 5 cups cooked white rice
Marinade:
In a small bowl, whisk together soy sauce, brown sugar, garlic, 2 tbsp. cooking oil, and rice vinegar.
Place chicken cubes in a large ziplock bag. Pour in marinade and seal bag. Turn to coat thoroughly. Refrigerate at least one hour, but I prefer to do this ahead of time and refrigerate over night.
Vegetables:
Chop zucchini and bell pepper into 1-2 inch pieces. Toss with 2 tbsp. oil, sea salt & pepper
Assemble Kabobs & Grill:
Pre-soak your wooden skewers in water for an hour. This will prevent them from burning on the grill. Preheat your grill and then turn to med-low. Assemble your kabobs with 3 pieces each of chicken, zucchini, and bell pepper. Grill kabobs for approximately 20 minutes (or until chicken pieces are cooked through), turning ¼ turn every 5 minutes.
While Kabobs are on the grill, cook your rice according to package directions. Serve each kabob on a bed of rice.
As a parent, I want to serve my children the very best in quality food which is why we have used the Foster Farms Simply raised chicken breasts and fresh zucchini grown right in our own backyard.
