I love a good crock pot recipe and nothing is more fulfilling than a hot stew on a cold day. A Hearty Crock Pot Beef Stew with drop biscuits will cook in your slow cooker while you work and warm you from the inside out when you come home for dinner. It is such an easy recipe to make and since it is a crock pot meal it is a great dish for busy moms and families on the go. This recipe will easily feed 6, possibly more if they are small children.
Hearty Crock Pot Beef Stew
Ingredients:
- 2 cups cubed beef
- 1 tbsp. oil
- 4 cups beef broth
- 2 cups water
- 1 onion
- 6 carrots
- 6-8 golden potatoes
- 1/2 tsp. sea salt
- 1/2 tsp. garlic powder
- 1/4 tsp. sage
- biscuits: 2 cups bisquick, 1/2 c broth from stew, 1/4-1/2 cup water
Directions:
Heat oil in a large skillet on med-high heat. Cut beef into 1-2″ chunks and place in the skillet. Brown the beef from 3-4 minutes.
Coarsely chop the onion, peel and quarter the potatoes, and cut carrots into 1″ pieces. Place meat and vegetables into crock pot.
Cover meat and vegetables with beef broth and water. Stir in sea salt, garlic powder, and sage. Cook on high 4-6 hours.
When stew as cooked for 4-6 hours and meat and vegetables are tender, mix together bisquick and broth from stew. Slowly add water until a dough forms. You do not want your dough to be runny.
Drop biscuit dough onto stew by the spoonful. Cover and continue to cook 15 minutes, biscuits will be light and fluffy.
