The Wunderkids love pancakes, and I am always trying to come up with ways to make their favorite foods healthier. I had an extra ripe banana left over the other day so I thought I’d try out some Oatmeal Banana Pancakes…it was a success!

1 c whole wheat flour (I used white whole wheat from King Arthur)1/2 c steel cut oats1 large egg lightly beaten2 tbsp cooking oil3/4 c milk1 ripe banana, mashed1 tbsp sugar1 tsp baking powderMix all ingredients together, cook on medium heat. Serve with syrup, honey, or fruit preserves.Makes 6-8 pancakes
