I have really been working on clean eating with my family. One of the things that I struggle most with is snacks and healthy foods to take on the go. Yesterday I made these Peanut Butter Protein Bars which were an absolute hit!
These are a delicious source of protein and energy and are perfect to take on the go.
Ingredients:
- 2 cups Oats
- 1 cup unsweetened coconut
- 1 cup chopped dried fruit (I used a plum/raisin/cranberry mixture)
- 1 cup peanut butter
- 2 tbsp. honey
- 1 tsp. vanilla
Toss the Oats into a blender or food processor to break them up a bit. I used the bowl on my Ninja Master Prep, which is perfect for smaller amounts. Do the same with the coconut and dried fruit. Combine dry ingredients in a large bowl.
Add peanut butter, honey, and vanilla. Combine well and spread into a small glass pan (I used my 2L Pyrex which is 7 x 11″). Refrigerate for 2 hours.
When the mixture has chilled, remove and slice into bars. My recipe made 14 bars. I individually wrapped each one in a piece of plastic wrap and store them in the refrigerator. They are now ready to take on the road!
***I have put together some rough nutritional information for these protein bars. This is not exact and only based on a quick research of ingredients and amounts used in this recipe. You will find that they are comparable (if not better in the calorie/protein areas) to most protein/energy bars.
