Yesterday I had my heart set on baking cookies. I just love to bake this time of year. I was planning on making sugar cookies so I took out my butter, sugar, and flour. Then I remembered that I had the Costco sized pack of pumpkin and everything changed. I was no longer making sugar cookies, instead I came up with a delicious cake like pumpkin spice cookies and topped them with cream cheese frosting.
It was one of those times where the food just guided me. I hadn’t planned it, it just happened. I started with the butter and sugar and them added the pumpkin. With Pumpkin comes spice so I added some of that too. Every cookie needs an egg, some baking powder and flour so that all got mixed in and when I was done, I place them on a cookie sheet and baked them. I have to be honest, I didn’t exactly write the recipe down but these were just to good not to share.
Cookies:
- 1 cup butter
- 1 1/2 cup sugar
- 1 cup pumpkin
- 1 egg
- 1 1/2 tsp. pumpkin pie spice
- 1 tsp baking powder
- 1/2 tsp. baking soda
- 1 tsp vanilla
- 3 cups flour
Preheat oven to 350* Cream together butter, sugar, and pumpkin. Add the egg and vanilla and mix well. In separate bowl combine flour, baking soda, and baking powder. Mix wet and dry ingredients. Bake for 10 minutes. Cookies will be soft and cake-like.
Frosting:
- 1/2 cup cream cheese
- 1 tsp vanilla
- 2 cups powdered sugar
- milk
Beat together cream cheese, sugar, and vanilla. Gradually add milk by the tbsp. until desired consistency. Top cooled cookies with frosting.
