I came up with a quick version of a Louisiana favorite to serve with my Minute Ready to Serve White Rice. Quick Shrimp and Sausage Jambalaya
Prep Time: 5 min, Cook Time: 20 min
Ingredients:
- 1 Green Bell Pepper, diced
- 1 Onion diced
- 3 celery stalks sliced down the middle and chopped
- 2 tbsp butter
- 1.5 tbsp flour
- 12 oz andouille Sausage, sliced
- 12 oz cooked frozen shrimp
- 1 can diced tomatoes
- 1 chicken bouillon cube
- 2 bay leaves
- 1/2 tsp cayenne (you can use 1/4 tsp for a less spicy alternative)
- 1.5 tsp cumin
- 1/2 tsp salt
Directions:
- saute celery, onion, bell pepper in butter for 5 min.
- Stir in flour
- Add sausage and shrimp. Continue to cook an additional 5 min.
- Add diced tomatoes, bouillon, bay leaves, cayenne pepper, cumin, and salt. Cover and Simmer on low 10 minutes.
- Spoon over Minute Ready to Serve Rice, enjoy!
