I love eating breakfast, I don’t love cooking it so much, so a one pan simple breakfast scramble is perfect for me. This Simple Veggie Breakfast scramble is quick, healthy, and delicious…everything I need to get my day going. I often switch up the veggies to use what is in the fridge, so if you don’t like something or if you have other vegetables on hand you can always add those instead.
Ingredients:
2 eggs
1/4 cup water
1/2 cup chopped zucchini
1 cup baby spinach
1/2 Tbsp. butter or cooking oil
1/4 Tsp. Kosher Salt
Sliced Tomato
Directions:
In a small pan, heat butter. Add zucchini and spinach and saute about 5 min. Meanwhile combine eggs and water and beat. Add eggs to pan and cook through, stirring occasionally. Top with tomato and salt.
