If you planted your zucchini at the beginning of spring, it is likely starting to sprout up some lovely green squash right about now. If your plant is anything like mine, it has grown larger than you would have ever imagined and you may be finding yourself with an abundance of zucchini and wondering just what in the world to do with it all! We are giving some of ours away to friends and neighbors but I have also found some lovely new zucchini recipes your family will be sure to love.
As our zucchini plant grew, I quickly became aware that I was going to have to find some new recipes to try out. I was so excited to find so many amazing and unique zucchini recipes since the family was really getting bored with sauted and grilled zucchini as a side. We made stir fry, side dishes, soups, bread and then I found all of these terrific zucchini recipes to try!
For a main dish you will want to try the Herbed Zucchini Pie, Zucchini Lasagna, Creamy Zucchini and Carrot Soup, or the Shrimp Scampi with Zucchini Noodles.
If you are looking to add a little interest to your zucchini side dishes and appetizers try out the Cheesy Zucchini and Rice, Fried Zucchini with Cool Dill Dip, Zucchini Breadsticks, or Zucchini Pizza Bites.
